Help about offset question!!!!!

First off, i am a noob!
I want to get rims for my car, i am looking to probably get some 18" and probably going to get 215/40 or 225/40 tires...
but here is my dillemma, i hear a lot about offset especially when i read about the rims and tires and they talk about offset.

What is offset? And how do i know which kind of offset is for me since i want 18"?
I've read that usually a person who rubs, they probably have +41 or +43 offset, which some say is not good.
They say since to help not to rub the best choice is to get +45 or ideally +51.

Ok, since i know nothing about this, im very confused, what is offset, and does the offset depend on the tires size?

Another question, on our av6s, would 225/40 tires look good and not rub in front or back especially when turning or would 215/40 be ok?

first of all, is your car dropped and if so how much? or how much are you planning to, i am going to get a 45mm offset in 18"x7.5, which i hear will have a good chance of not rubbing, i have tsw revos on right now, they are 38mm with 215/45/17 and they rub all the time, especially when people are in the back, ive heard lots of diff things about offset, some people told me its ok if they are 42mm with a drop if ur rims is only 7.5, but if it 8" wide or more u def need like a 48 or 51, ill be getting my new motegi mr7s on next week, they are 45mm offset, ill let u know if mine rub

i still dont get it lower the offset the more it would rub, so the higher the better, and why is this???

The lower the offset, the more the wheels stick out = easier to rub.
